Reader Brendan let me know that a new restaurant named Hummus Republic, a “modern Mediterranean kitchen” chain founded in 2013, has opened to big crowds at 6546 Pardall Road in Isla Vista, the former home of Blaze Pizza and Pasta House. “Hummus Republic is a growing fast-casual modern Mediterranean food franchise specializing in healthier, faster, fresher, lighter and tastier customizable bowls, wraps and pitas,” is how the eatery describes their offerings. “Our food is always made fresh and served quickly using organic, sustainable, and locally grown ingredients whenever possible.” They have nine locations in California (Burbank, Chino Hills, El Segundo, Fresno, Newark, Santa Monica, Temecula, Valencia, Visalia), in addition to a few in Massachusetts and New Jersey.
