Chef and owner Nick Bodden has opened New York-style Revolver Pizza at 1429 San Andres Street, the former long-time home of Paesano’s Pizzeria. Bodden who comes from New York, and has worked locally at bouchon, Sama Sama, and The Coterie Club, tells me he loves operating his business on the west side. “It’s the perfect spot,” says Bodden. “I couldn’t imagine doing this on State Street. It’s more of our style. We couldn’t do what we do here if we we are trying to make a nut every month. We are not dictated by rent. We’re allowed to cook really good food and keep the menu super simple.”
Bodden has put together an offering that includes Rossa Pie, Margherita, Pepperoni, White Pie, White with veggies, Rossa with veggies, and Caesar Salad. “We run this this place with four people,” says Bodden. “We mill our own flour. We make our own cheese. The ricotta is made in house, the mozzarella is hand-pulled. Just being here, tucked away in the neighborhood, not having to worry about rent allows us to do really good stuff.” To complete the experience, wine and beer will be available once their liquor license is granted.
Bodden tells me that they quickly sell out of pizzas when they open and are pretty much reservation only. Revolver keeps some pies for walk-ins but most sales come through their phone number Bodden calls “the hotline.” They post the number of pies left on Instagram so people can know when they are sold out. When they sell out Revolver take reservations for the next day. So by the end of Friday night they are already half-booked on Saturday.
