As the old adage goes, “to do anything great you must do it for 10,000 hours.” Tom & Vicki Dolan, with over 65 combined years of experience in the food & beverage industry, open Toma Restaurant and Bar tonight at 324 W. Cabrillo Boulevard, in the former location of Emilio’s. Toma offers Italian and Mediterranean dishes from Santa Barbara’s seasonal bounty.
“We have a passion and love for the business of entertaining our guests, friends and family,” says Tom Dolan, former employee of Emilio’s for over twenty years. “We strive to offer an incredible culinary experience with a warm and friendly service driven atmosphere that you will want to come back to time and time again. We have always loved the experience of meeting new people and are excited to welcome you.” Co-owner Vicki Dolan has been working with the Fours Seasons Hotel & Resorts and has held positions as F&B Director, Resort Manager and Capital Project Manager.
Chef Nat Ely, formerly Executive Chef at Los Olivos Café and an Emilio’s veteran, created a menu that includes entrées (seabass $25, grilled prawns $27, cioppino $29, roasted chicken $24, braised short rib $26, vegetable roll $18, ‘flat iron’ steak $27), pasta (raviolo $16, black spaghetti $18, gnocchi $22, lasagne $18, rigatoni $17) and pizza (guanicale $16, margherita $14, il fungi $16, smoked salmon $18). A full bar offers local and Italian wines along with hand-crafted cocktails and spirits.
