Mimosa did a goose roulade for Christmas. One of the more adventurous/creative things they do compared to the rest of their menu.
John Downey does goose during the holidays.

Coincidentally, I had goose for lunch today. But it came from an asian market in San Francisco. Good luck.
You should learn how to cook your own goose, it’s not as daunting as one would think!
